Hey there! I’ve been trying to plan my meals for the week which probably only happens a couple weeks a month. A bit of a backstory – I’m single, I live alone, I’m vegetarian, and I hate cooking hahaha. I don’t find much pleasure in eating alone, so if I could I would just take an IV drip to get my nutritional needs and not have to worry about planning, cooking, cleaning, or eating alone. BUT that’s not how the real world works, so here we are.
In theory, I’ll include everything I’ve planned to make for the week below, and then next week I’ll let you know what I actually made and what I thought about them. I have a boatload of cookbooks, but I generally go to Pinterest on a weekly basis for recipes. I wish I was one of those people who was an intuitive cook and could just throw recipes together but that’s just not me.
Without further ado – here’s what I’ve planned for the week.

Breakfast/Snacks
- Fluffy Cottage Cheese Egg Muffins from Everyday Health Recipes
- Protein Baked Oats from Real Life Nutritionist
Lunch/Dinner
- Mason Jar Peanut Salad from Nourished by Nic
- High Protein Pasta Salad from Real Life Nutritionist
Sweet Treat
- Peanut Butter Oatmeal Choc Chip Cookies from The Roasted Root
I have to laugh because I just created my little image of “groceries for the week” and how amazing would it be if those were the only groceries I bought?! On this particular week I spent an absurd amount of money because not only had I not gone shopping in about two weeks but I also bought a lot of other random ingredients thinking of meals I might make and also lots of snackies… SO, just know – there were sooo many more groceries than that.
OK bye!
